A Requirements Document outlines your project so that (1) you know what you are doing, and (2) your Client knows what they are getting. It is always a good idea to get that fixed ahead of time.
Here is the format I want you to follow:
PDF, to see it
Word, to write your own.
In that document, it mentions a doing a Gantt Chart.
This can be done any software way you want that takes task durations and dependencies into account.
Project Management software, such as Microsoft Project does a very nice job.
Do not draw a Gantt chart by hand.
It won't take dependencies into account.

Project is really easy to learn, easy to update information in,
and generates your charts automatically.

In the requirements document description, it mentions doing a Dataflow Sequence Diagram.
This can be done any (neat) way you want.
